Replace sugar with Just Panela!!!

One of the things we mainly get asked about is measurements and conversion between Panela and sugar.

Panela is unrefined non-centrifugal brown sugar is a natural sweetener obtained from the evaporation and concentration of sugarcane juice, it is the most natural form of sugar there is due because of the process of obtaininig Panela.

It all starts when the juice of the cane is extracted by compression in mills, which are then filtered, purified and clarified. Afterwards, the juices are concentrated by evaporation in a series of metal containers, heat exchangers or pans. The determination of the consistency depends on the heating time and the point at which the process can be completed depends on the knowledge and experience of the operators. The concentrated material is transferred to a shake container, and the Panela is molded and packed as a final product. There is not added chemicals during the production process and this is why all the Panela can be quite different depending on its origin.

While we make an effort to change hearts and minds to a more natural product, we want to inform about how you can replace the use of white sugar to Panela. The matter it is quite simple and to be short: for every portion of sugar you need 1 1/3 portion of Panela.

So in order to replace sugar while baking or cooking, you need to know that 100 gm of sugar is equivalent to 133 gm of unrefined organic raw sugar AKA Panela.

So let’s say you need 125 gm (1/2 cup) of sugar, that means you will need to use: 166.25 gm of Panela, that is 1/2 cup and 2 tablespoons (Tbsp).

Another example is if you need 1 cup (250 gm) of white regular sugar in your cookies recipe, that means you must replace it with 1 cup and 1/3 of Just Panela, which is the same as 333.5 gm.
