Recipe #4: Slow Cooked Ginger Panela Pork Loin

 2.50 lbs Pork Loin
 1 tbsp Olive Oil
 Salt and Pepper
Panela Ginger Marinade:
  cup Panela
 ¼ cup Soy Sauce
 1 tbsp Worcestershire Sauce
 1 l Juice of one lime
 3 Cloves Garlic, Minced
 2 tbsp Fresh Ginger
 Cilantro and lime wedges to garnish

1. In a large skillet, heat the oil over medium-high heat. Season pork with salt and pepper and let sear on both sides until the outside edges begin to blacken. Remove from heat and place at bottom of a slow cooker (or a large pot).

2. Whisk together marinade ingredients and pour over pork. Let cook for 6 hours on the lowest heat possible if using pot, up to 8 hours with a slow cooker.

3. Once pork is finished (when falls apart at the touch of the fork)Remove from pot and cook down the marinade until it begins to thicken. Pull apart pork with knife or fork and mix it in with the marinade1
