Just Panela Tiramisu

Ingredients (Lady Fingers)


3 large eggs
1 egg white
3/4 cup Just Panela
1/2 tsp vanila extract
1 cup all-purpose flour
1/8 teaspoon kosher salt
Just Panela for dusting

Ingredients (Tiramisu)
4 large egg yolks
3/4 cupJust Panela
1/3 cup Marsala wine
16 ounces mascarpone cheese
1 cup heavy cream
2 cups brewed espresso
3 tablespoons coffee liqueur or brandy
2 teaspoons unsweetened cocoa powder (for topping)

Instructions (Lady Fingers)

1. Preheat the oven to 375F.

2. Separate whites and yolks in two separate bowls.

3. Whip the egg whites until fluffy.

4. Add 1/4 cup of Just Panela, slowly while whipping. Continue whipping until stiff.

5. Whip the egg yolks with the remaining Just Panela until thick, then slowly add vanilla.

6. Use spatula to gently fold in the whipped whites.

7. While folding, sift the flour and salt over the mixture.

8. Pipe the batter in 3-inch long lines, onto the prepared baking sheet.

9. Top with Just Panela and bake for 15 minutes until golden around the edges.

Instructions (Tiramisu)

1. Put egg yolks, Just Panela, and Marsala in a large metal mixing bowl, and set it over a pot of simmering water.

2. Whisk until the mixture is thick and doubled in volume.

3. Remove from the heat, and whisk in the mascarpone.

4. Fold the whipped cream into the mascarpone mixture. This will be your filling. Set aside for now.

5. Whisk espresso, liqueur, and Just Panela together in a shallow bowl.

6. Dip the ladyfingers into the espresso mixture and arrange in an even layer in the bottom of a 9-inch by 13-inch pan.

7. Spread half the filling over the ladyfingers, and repeat.

8. Spread the rest of the filling on top, dust with cocoa powder, and refrigerate for 8 hours.
